At the risk of foot in mouth, I'll jump in.

So you pull this Plot Style Table down & NORMAL is the only thing showing?

Are you using ctb or stb plot styles?

They are all .ctb files. Greyscale seems to be used in other company drawings.

.stb's are much more versatile than .ctb and similar to how other software works. Lineweights are set with layer properties.

.ctb's are color based and are considered "old school" by some people. I still use .ctb's just because it is what I am familiar with and I don't do much setting up of lineweights.

Just in case it helps, here are the layers, and their states, from the drawing I am having problems with:

DOOR 2  and BODY don't print "white" like the other layers in this drawing.

I had that backwards, they are only using Color Dependant Plot Styles.  The only thing I can load are .ctb's without making major changes. I asked the other guy here to pull his up and it comes up the same as mine:
