What does AutoCAD call this...See image

AutoCAD does a break line when you choose jogged dimension. Or at least that's what I call it.

In the image below what does AutoCAD call a the instance of dimension line that isn't straight?

It's just a Leader Line, you can the number of points by clicking Settings.

That's all I could find too, Tom. I was hoping for a variable that would allow me to change the length of the landing next to the text.

The length of the landing line for a quick leader is the size of the arrowhead.

For a multileader the gap can be controlled using MLEADERSTYLE click [Modify…] the "Landing Gap" value under 'Leader Structure' tab → Set landing distance.
