Is there a way to control which template AutoCAD uses when WBlocking?

I don't think it works that way.
Because you are in an existing drawing, you are basically are copying whatever standards, active layouts etc. that you have selected to create a new drawing file.
 
So only the content you select goes into the new file along with whatever styles etc. that were current at the time.
 
I believe that's how it works.
